Mediterranean Hummus Wrap

minutesThis is basically the other Greek salad that I’ve shared – just add a wrap and hummus. Oh so yummy!
Ingredients
- Salad
2 cups cucumber, peeled and chopped (about 2)
2 cups tomato, chopped (about 2)
1/2 cup crumbled feta cheese
1/4 cup pitted kalamata olives, sliced
2 tbsp lemon juice, or red wine vinegar
2 tbsp olive oil
1/4 tsp salt
1/4 tsp pepper
- Wrap
4 whole-wheat pitas, wraps, or tortillas
1 cup hummus plain, garlic, roasted pepper (just whatever you like)
Directions
- In a medium bowl, combine the Greek salad ingredients. Cover and refrigerate until ready to serve.
- Spread hummus generously on top of the wraps. Fill with the salad, leaving the juices behind, and tightly roll up.
Notes
- Salad can be made in advance and stored in the fridge for up to 5 days. The filled wrap is best served immediately.
