This entrée or side salad is packed with nutrients, but so simple. I eat it often, and the boys love it, too.

Ingredients

  • 2 cucumbers

  • 2 Roma tomatoes

  • 1/4 purple onion

  • 1/3 cup black olives – optional

  • 1/4 lemon

  • dash black pepper

  • dash dried oregano – optional

  • 2 tsp olive oil – optional

  • feta cheese – optional

Directions

  • Slice cucumbers, tomatoes, purple onion, and olives (if you like them) and divide them between two 4-cup containers.
  • Squeeze the lemon juice over each container. Sprinkle with pepper and oregano to taste (optional). You can also drizzle a teaspoon or so of olive oil over each.
  • Store in the fridge until ready to eat. Add feta, if desired, and enjoy!

Notes

  • I ate this every day for two summers. It is so nice to have something good for you that you can quickly throw together.
