Apple Cinnamon Oatmeal Muffins

Ingredients
2 cups flour
1/2 cup old fashioned oatmeal
1/2-3/4 tsp cinnamon
1 tsp baking soda
1/4 tsp salt
1/2 cup butter, room temperature
3/4 cup brown sugar
2 eggs
1 1/2 cups unsweetened applesauce
Directions
- Preheat the oven to 350° and line your muffin pan with paper or silicone baking cups.
- In the bowl of your stand mixer (or by hand), cream together butter and brown sugar. Add the eggs and applesauce and mix well.
- While mixing, add in the cinnamon, baking soda, and salt.* Then add flour, 1/2 cup at a time, followed by the oatmeal. Mix only until moist.
- Spoon the batter into the muffin liners until about 2/3 full. Bake 19-23 minutes or until a toothpick inserted into the middle of the muffins comes out clean.
Notes
- If mixing by hand, you might choose to stir together the dry ingredients separately then add them into the wet ingredients gradually.
