Greek Salad

minutesThis entrée or side salad is packed with nutrients, but so simple. I eat it often, and the boys love it, too.
Ingredients
2 cucumbers
2 Roma tomatoes
1/4 purple onion
1/3 cup black olives – optional
1/4 lemon
dash black pepper
dash dried oregano – optional
2 tsp olive oil – optional
feta cheese – optional
Directions
- Slice cucumbers, tomatoes, purple onion, and olives (if you like them) and divide them between two 4-cup containers.
- Squeeze the lemon juice over each container. Sprinkle with pepper and oregano to taste (optional). You can also drizzle a teaspoon or so of olive oil over each.
- Store in the fridge until ready to eat. Add feta, if desired, and enjoy!
Notes
- I ate this every day for two summers. It is so nice to have something good for you that you can quickly throw together.
