Ingredients

  • 2 cups flour

  • 1/2 cup old fashioned oatmeal

  • 1/2-3/4 tsp cinnamon

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup butter, room temperature

  • 3/4 cup brown sugar

  • 2 eggs

  • 1 1/2 cups unsweetened applesauce

Directions

  • Preheat the oven to 350° and line your muffin pan with paper or silicone baking cups.
  • In the bowl of your stand mixer (or by hand), cream together butter and brown sugar. Add the eggs and applesauce and mix well.
  • While mixing, add in the cinnamon, baking soda, and salt.* Then add flour, 1/2 cup at a time, followed by the oatmeal. Mix only until moist.
  • Spoon the batter into the muffin liners until about 2/3 full. Bake 19-23 minutes or until a toothpick inserted into the middle of the muffins comes out clean.

Notes

  • If mixing by hand, you might choose to stir together the dry ingredients separately then add them into the wet ingredients gradually.
