This is a great make ahead option for a cozy meal. Everything cooks at the same time, and the kitchen smells amazing!

Ingredients

  • 1 whole – chicken 3-5lbs

  • 1 tbsp paprika

  • 1/4 tsp chili powder Or cayenne for more heat

  • 2 tsp salt

  • 1 tsp pepper

  • 1 tsp garlic powder

  • 1/2 tsp onion powder

  • 2-3 medium potatoes, cubed – 7-8 baby reds are yummy, too.

  • 2 carrots, pealed and sliced

  • 1/2 medium onion, chopped

Directions

  • Line your slow cooker for easy clean up. (Trust me; it’s worth it.)
  • Place the veggies in the bottom of the slow cooker.
  • Mix the seasonings in a small bowl.
  • Remove the neck or any other parts included in your chicken, rinse the bird, and pat it dry. Place the chicken breast side down into the slow cooker.
  • Rub the seasoning mixture all over the bird and even inside or under the skin if desired.
  • Place the lid on top and cook on low for 4-6 hours or until a meat thermometer reads 165* or greater.
  • Allow the meat to rest 10 minutes before cutting. Enjoy!

Notes

  • I love how many ways I can use the leftover chicken (like for paninis, enchiladas, taco bowls, or chicken salad sandwiches).
  • After removing the meat, place the bones and veggies like carrots, celery, and onion back into the crockpot and fill with water. Cook on low overnight. Strain and store your homemade chicken bone broth! So easy!
