Chicken Paninis

This is a super easy but delicious meal for lunch or dinner and a great way to use up leftover chicken.


  • French bread or sandwich bread slices

  • shredded chicken

  • mozzarella cheese

  • olive oil

  • lemon juice

  • 1 pinch dried oregano

  • purple onion – optional addition

  • basil – optional addition

  • tomato slices – optional addition


  • Heat mini grill or panini maker.
  • Add oregano and lemon juice, to taste, to the shredded chicken.
  • Brush olive oil on one side of two pieces of bread. Place the first piece oiled side down on the heated mini grill.
  • Add chicken, mozzarella, and desired additional toppings on the slice of bread, then top with the second slice, oiled side up.
  • Close mini grill and toast until golden brown.
