Easy side for breakfast or really any meal. Definitely falls into the comfort room category for me.
3 Baking potatoes
2 tbsp Olive oil
Salt to taste
Pepper to taste
Chopped onion – optional, to taste
- Peal and cube the potatoes. (I use my Chop Wizard; our youngest says this is his job.)
- Heat the oil over medium in a large skillet. Add the chopped potatoes and seasoning. Cover.
- Stir occasionally. The potatoes are ready when golden to medium brown and tender.
- Best served immediately.
- We love the simplicity of this side and typically just put it with scrambled eggs or even add it to breakfast burritos with scrambled eggs, browned pork sausage, and cheese.
