Chicken Paninis
Course: EntreeDifficulty: BeginnerThis is a super easy but delicious meal for lunch or dinner and a great way to use up leftover chicken.
Ingredients
French bread or sandwich bread slices
shredded chicken
mozzarella cheese
olive oil
lemon juice
1 pinch dried oregano
purple onion – optional addition
basil – optional addition
tomato slices – optional addition
Directions
- Heat mini grill or panini maker.
- Add oregano and lemon juice, to taste, to the shredded chicken.
- Brush olive oil on one side of two pieces of bread. Place the first piece oiled side down on the heated mini grill.
- Add chicken, mozzarella, and desired additional toppings on the slice of bread, then top with the second slice, oiled side up.
- Close mini grill and toast until golden brown.
