Easy side for breakfast or really any meal. Definitely falls into the comfort room category for me.

Ingredients

  • 3 Baking potatoes

  • 2 tbsp Olive oil

  • Salt to taste

  • Pepper to taste

  • Chopped onion – optional, to taste

Directions

  • Peal and cube the potatoes. (I use my Chop Wizard; our youngest says this is his job.)
  • Heat the oil over medium in a large skillet. Add the chopped potatoes and seasoning. Cover.
  • Stir occasionally. The potatoes are ready when golden to medium brown and tender.
  • Best served immediately.

Notes

  • We love the simplicity of this side and typically just put it with scrambled eggs or even add it to breakfast burritos with scrambled eggs, browned pork sausage, and cheese.
