These refreshing scones are perfect for a holiday brunch, coffee date, or alone time with your coffee or tea.

  • Scones
  • 2 cups flour; plus more for dusting the work surface.

  • 6 tbsp sugar

  • 1 tbsp zest from an orange; About 3/4 of the orange.

  • 1 tbsp baking powder

  • 1/2 tsp salt

  • 1/2 cup unsalted butter, very cold and diced into 1/4″ cubes; I stick mine in the freezer ahead of time.

  • 1/2 cup heavy cream (or milk will work); Plus about 1T more for brushing.

  • 1 large egg

  • 1 1/2 tsp vanilla

  • 3/4 cup dried cranberries

  • Glaze
  • 1 cup powdered sugar

  • juice from 1/2 an orange

  • 1 tsp zest from an orange; About 1/4 of the orange.

  • Preheat the oven to 400°.
  • In a large bowl, whisk together the flour, sugar, orange zest, baking powder, and salt.
  • In a medium bowl, whisk together the heavy cream/milk, egg, and vanilla. Set aside.
  • Add the butter cubes to the dry ingredients and stir using a spatula or wooden spoon.
  • Mix the dried cranberries into the large bowl.
  • Pour the wet ingredients into the large bowl and stir until just combined. We do not want to over-mix or blend the butter into the dough.
  • Dump the dough onto a lightly floured surface. (I use the silicone baking mat that I’ll be using to bake the scones.) Pat the dough into an 8″ circle. If the dough is too sticky, dust the top with flour then pat down.
  • With a long knife, cut the circle pizza-style into 8 slices. If the dough is too sticky to cut, place the entire mat into the freezer for 5-10 minutes to firm up before slicing.
  • Spread the scones out on the baking mat or parchment paper and brush with heavy cream or milk. You can sprinkle the tops with coarse or regular sugar if desired.
  • Bake at 400° for 14-17 minutes, or until golden brown and an inserted toothpick comes out clean.
  • While the scones slightly cool on the pan, stir together the orange zest, powdered sugar, and orange juice to make a glaze. Drizzle the glaze over the scones and enjoy!
