This is a delicious part of breakfast, brunch, or coffee date. So yummy! (Probably because of the butter ?

Ingredients

  • 1 cup Oil or unsweetened applesauce

  • 2 Eggs

  • 1 tsp Vanilla

  • 1 cup Milk

  • 1 cup Sugar

  • 3 cups Flour – I’ve used King Arthur Flour’s Gluten Free Baking Mix as well

  • 1 tbsp Baking powder

  • 1/2 tsp Salt

  • 1 1/2 cups Brown sugar

  • 2 tsp Cinnamon

  • 1/2 cup Butter

Directions

  • Preheat the oven to 350*.
  • In a large mixing bowl, combine sugar, oil, eggs, vanilla and milk together.
  • In a medium bowl, stir together the flour, baking powder, and salt.
  • If using a standing mixer, slowly add the dry ingredients into the wet ingredients on low. Otherwise, mix together by hand. Mix just until combined.
  • Pour half of the batter into a 9×13 baking dish.
  • In the medium bowl, combine the brown sugar and cinnamon. Sprinkle half of the mixture over the batter in the baking dish.
  • Layer remaining batter into the baking dish and carefully spread it out with a spatula.
  • Sprinkle remaining cinnamon sugar mixture over the top.
  • Melt the butter in a small dish and drizzle over the surface of the batter.
  • Bake at 350* for 30-35 minutes or until the top of the cake appears dry and knife inserted comes out clean.

Notes

  • This is perfect for all occasions. We have enjoyed it for an everyday breakfast (with leftovers for the next day), holiday gatherings, and mom groups. It is definitely a family favorite. 
  • Can also be called Cinnamon Roll Cake if you happen to have a 4 year old who insists he doesn’t like coffee.
