Ingredients
1 cup Oil or unsweetened applesauce
2 Eggs
1 tsp Vanilla
1 cup Milk
1 cup Sugar
3 cups Flour – I’ve used King Arthur Flour’s Gluten Free Baking Mix as well
1 tbsp Baking powder
1/2 tsp Salt
1 1/2 cups Brown sugar
2 tsp Cinnamon
1/2 cup Butter
Directions
- Preheat the oven to 350*.
- In a large mixing bowl, combine sugar, oil, eggs, vanilla and milk together.
- In a medium bowl, stir together the flour, baking powder, and salt.
- If using a standing mixer, slowly add the dry ingredients into the wet ingredients on low. Otherwise, mix together by hand. Mix just until combined.
- Pour half of the batter into a 9×13 baking dish.
- In the medium bowl, combine the brown sugar and cinnamon. Sprinkle half of the mixture over the batter in the baking dish.
- Layer remaining batter into the baking dish and carefully spread it out with a spatula.
- Sprinkle remaining cinnamon sugar mixture over the top.
- Melt the butter in a small dish and drizzle over the surface of the batter.
- Bake at 350* for 30-35 minutes or until the top of the cake appears dry and knife inserted comes out clean.
Notes
- This is perfect for all occasions. We have enjoyed it for an everyday breakfast (with leftovers for the next day), holiday gatherings, and mom groups. It is definitely a family favorite.
- Can also be called Cinnamon Roll Cake if you happen to have a 4 year old who insists he doesn’t like coffee.
