I married into this recipe. Hamburger rolled up in dough, baked, then covered in cheese sauce? Yes, please! Serve with mashed potatoes (also covered with cheese sauce) and the family tradition is complete.

Ingredients

  • Filling
  • 1 lb ground beef ground turkey or venison would work, too

  • 1 small onion, chopped

  • salt to taste

  • pepper to taste

  • 1/3 cup ketchup

  • Crust
  • 2 cups flour

  • 1/4 cup shortening

  • 3/4 cup milk

  • Cheese Sauce
  • 2 tbsp butter

  • 2 tbsp flour

  • 1/4 tsp salt

  • dash pepper

  • 1 cup milk

  • 1/4-1/2 cup shredded cheddar cheese (or more ?)

Directions

  • Preheat the oven to 425°.
  • Brown the meat with onion, salt, and pepper. Drain grease. Add ketchup as a sauce (but not as runny as sloppy Joes). Set the mixture aside to cool slightly.
  • Make the crust by combining the flour, shortening, and milk with a fork (like pie crust). On a floured surface, roll out the dough in a rectangle no longer than your baking sheet.
  • Spread the meat mixture over the dough, leaving about 1/2″ empty around the edges.* Roll the dough up, starting on the long edge. Pinch the seams and place seam side down on a baking sheet. Brush the top of the roll with milk, if desired. Using a sharp knife, slice about halfway through the roll every inch or so.
  • Bake for 15 minutes or until golden brown.
  • Cheese Sauce
  • While the roll is in the oven, make the cheese sauce.
  • In a small sauce pan over medium-low heat, melt the butter. Add the flour, salt, and pepper whisking constantly. Once blended, slowing add the milk while continuing to whisk. The mixture will thicken. Remove from heat and stir in the cheese.
  • Slice the roll, pour sauce over top, and serve.

Notes

  • If the meat mixture is too warm, the dough will become difficult to work with as the shortening warms up.
  • We typically serve meat roll with mashed potatoes and corn.
  • Kids love this, but you may need to sell it as a “cheeseburger”.
